Ingredients for 4 servings:
- 1 honeydew melon(s)
- 1 lime(s), juice
- 1 vanilla pod(s)
- 100 ml coconut milk
- 2 tbsp brown sugar
- 125 g low-fat yogurt
- Sweetener, liquid
- 3 tsp desiccated coconut

Cut the honeydew melon into pieces and drizzle with lime juice. Halve the vanilla pod lengthwise and scrape out the seeds. Heat the coconut milk with the sugar and vanilla seeds, stirring until the sugar dissolves. Let cool slightly. Stir in the yogurt and season with sweetener to taste. Mix the honeydew melon with the coconut sauce and sprinkle with desiccated coconut.
