Spinach soup

Ingredients for 4 servings:

  • 1 kg spinach
  • 350 ml vegetable stock
  • 50 g butter
  • ½ liter of milk
  • some nutmeg
  • salt and pepper
  • 40 g Parmesan, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Wash and boil the spinach in salted water for 3-4 minutes, squeeze it dry, and chop it. Then sauté it in melted butter for 2 minutes. Add the stock, milk, and nutmeg, bring to a boil, and season with salt and pepper. Add the Parmesan cheese, mix well, and simmer for another 1-2 minutes. Serve immediately.
