Indian sauce with yogurt and tomatoes

Mix the yogurt with salt and sugar. Cut the tomato crosswise, pour boiling water over it, and peel it. Then cut it into small cubes and stir it into the yogurt. Wash and finely chop the coriander and mix it with the yogurt. The raita goes very well chilled as a side dish to an Indian curry.
