Ingredients for 1 servings:
- 500 g flour
- 225 g water, 30°C
- 25 g milk powder
- 65 g sugar
- 65 g butter
- 5 g salt
- 1 egg yolk
- 1 tbsp vanilla sugar
- 1 cube of yeast, 40g
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Combine all ingredients and knead into a yeast dough. (You can also use 250g milk (also at about 30°C) instead of 225g water and 25g powdered milk.) After kneading the dough for about 10 minutes, it needs to rest for 10 minutes. Then divide the dough and weigh it so that you have 8 equal pieces. Let these pieces rest for another 10 minutes. It is best to cover them with plastic wrap during the resting time. Then roll the 8 pieces of dough into strands approximately 45cm long. Important: All strands must be exactly the same length. Then place four strands in front of you in a cross shape. Press the ends together in the middle of the cross. Then take the top strand with your right hand and the bottom strand with your left hand and place them on the opposite side. Now hold the left strand with your right hand and the right strand with your left hand, so that your right arm is under your left arm, and place the strands on the other side. Then repeat the process. Braid the vertical and horizontal strands again. Always follow the sequence. Brush the resulting braids with egg yolk and let them rise for 15 minutes. This is best done at approximately 40°C and 80% humidity. Then bake the two braids in a preheated oven at 200°C (top/bottom heat) for 15-20 minutes. They’re done when they’re golden brown.
