Caramelized figs with goat cheese topping

Ingredients for 4 servings:

  • 4 figs
  • 200 g goat’s cheese
  • 3 tbsp sugar, depending on the sweetness of the figs a little less
  • 150 ml red wine, dry
  • 4 sprigs rosemary
  • pepper
  • 3 tbsp butter
  • 2 tbsp whipped cream
  • some Balsamic vinegar (Crema di Balsamic vinegar)

Remove the stems from the figs, halve them lengthwise, and set aside. Preheat the oven to 170 degrees Celsius (350 degrees Fahrenheit). Mix the cream cheese with the cream and finely chopped needles from one of the rosemary sprigs, and season with pepper. Caramelize 2 tablespoons of butter with the sugar in a non-stick pan, then place the figs cut-side down in the pan. Fry for a moment, then add the red wine and toss the figs gently in the pan, but do not turn them. Add the remaining rosemary sprigs to the pan. Cover the pan for 5 minutes, then open the lid and wait until the wine has reduced to a syrupy sauce. Place the figs in a buttered baking dish, cut-side up. Spread the goat cheese cream on top. Pour the syrup from the pan over and around the figs, arrange the rosemary sprigs around them, and bake the figs in the oven for about 10 minutes. Arrange 2 fig halves on each plate, drizzle with a little balsamic cream and serve immediately!
