Ingredients for 2 servings:

  • 60 g butter or margarine
  • 60 g semolina
  • 1 egg(s)
  • Salt
  • nutmeg
  • e.g. vegetable broth

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Mix the egg, semolina, and margarine with a fork. Season with salt and nutmeg. Let it rest or steep for 1 hour. Then, using a teaspoon, scoop out dumplings as needed and drop them into boiling vegetable broth. Let them steep for about 10-15 minutes in the residual heat or gently simmering broth. Variations are possible by adding chopped chives or parsley to the dumpling dough.
