Green spelt dumpling soup

Ingredients for 4 servings:

  • 75 g butter, soft
  • 2 eggs
  • 1 tbsp cream
  • ½ tsp salt
  • 150 g green spelt flour, fine, freshly ground
  • 1 pinch of baking powder
  • 1 ½ liters vegetable broth
  • n. B. Chives, chopped
  • e.g. chopped parsley

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Beat the softened butter with the eggs until fluffy. Add the cream, salt, spelt flour, and baking powder and mix well. Then let it swell for half an hour. Meanwhile, bring the vegetable broth (or noodle soup) to a boil. Form the swollen dough into small dumplings, add them to the hot soup, and let them simmer for about 10 to 15 minutes (do not boil). Add parsley and chives to the soup/broth, if desired.
