Ingredients for 1 servings:

  • 500 g flour
  • ½ cube of yeast, fresh
  • 75 g sugar
  • 9 tbsp milk
  • 2 eggs
  • 200 g butter, soft (alternatively quark)
  • 1 pinch of salt
  • 2 tbsp granulated sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Specialty from Swabia; yeast dough pastry sprinkled with sugar, makes 24 pastries

Place the flour in a bowl, make a well in the center, and crumble in the yeast. Sprinkle 1 tablespoon of sugar over the dough. Mix with 6 tablespoons of milk, cover, and let rise for about 30 minutes. Add the eggs, butter (or quark), salt, and the remaining sugar, mix, and beat thoroughly until a smooth dough forms. Cover and let rise for about an hour. Divide the dough into 24 pieces. Roll out on a lightly floured surface into tapered, approximately 20 cm long strands. Twist these from the center outward to form a braided roll. Place on a lined or greased baking sheet and let rise for another 30 minutes. Preheat the oven to 200°C. Brush the flax rolls with the remaining milk and sprinkle with sugar. Bake in a hot oven for 20 to 25 minutes until golden brown. Baked with quark, each piece contains only 32 kcal.
