Baked leek with cheese sauce

Ingredients for 4 servings:

  • 1 ½ kg leeks
  • ½ liter vegetable broth
  • 4 tbsp fat (vegetable cream)
  • 2 tbsp flour
  • 375 ml milk
  • 100 g mountain cheese, grated
  • 150 g ham, cooked
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim the leeks and cut into 10-15 cm long pieces. Bring the vegetable stock to a boil and cook the leeks for about 5 minutes. Drain in a sieve. For the cheese sauce, heat 3 tablespoons of vegetable cream, add the flour, and stir. Let it froth briefly. Stir in the cold milk, add 50 g of grated cheese, and melt. Season with salt, pepper, and nutmeg. Wrap the leek pieces in ham and place in the baking dish greased with the remaining vegetable cream. Spread the cheese sauce on top and scatter the remaining cheese over the top. Bake in a preheated oven at 200°C for about 30 minutes.
