Ingredients for 6 servings:

  • 250 g toast bread
  • 150 g butter
  • 400 g asparagus, cooked
  • 250 g ham (cooked + raw ham)
  • 4 eggs
  • 125 ml milk
  • 125 ml cream
  • 100 g mountain cheese
  • salt and pepper
  • nutmeg
  • Herbs

Gäuboden asparagus cake

First, line a 26 cm tart pan with baking paper to ensure it’s airtight (or grease a suitable casserole dish). Line the pan with about 2 cm of toast and drizzle with melted butter. Drain the cooked asparagus well and arrange it in a star shape on the bottom, with the tips facing outward – trimming if necessary. Cut the ham into thin strips, placing some between the asparagus and the rest on top. Preheat the oven to 180°C (fan oven). Whisk the eggs, milk, and cream, season with salt, pepper, and nutmeg, and add half of the cheese. Pour the egg mixture over the asparagus. Sprinkle the tart with a little more cheese and bake for about 20 minutes. Serve with: salad, hollandaise sauce, etc.
