Cheese spaetzle special

Ingredients for 3 servings:

  • 375 g flour
  • 3 eggs
  • 250 ml milk or water
  • 1 pinch of salt
  • 1 large onion(s)
  • 100 g bacon cubes
  • 1 cup meat broth
  • 50 g cheese (Limburger), diced
  • 100 g cheese (e.g. Emmental), grated
  • salt and pepper
  • Herbs, fresh or dried

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

For the batter, whisk the flour, milk, eggs, and salt with a wooden spoon until bubbles form, then strain through a spaetzle sieve into boiling salted water. The spaetzle are ready as soon as they float to the surface. Brown the bacon and onion well in a large pan, then add the spaetzle directly from the pot to the hot pan. Add a little bit of the cheese to each portion of the cooked spaetzle to ensure they are evenly mixed. Pour the meat broth over the top, sprinkle with the remaining cheese, brown well, and mix well, season with salt, pepper, and herbs. Tip: Top with crispy fried onions or ready-made fried onions and serve with a delicious green salad.
