Swabian Maultaschen with egg

Ingredients for 2 servings:

  • 6 Maultaschen
  • 4 tbsp milk
  • 4 eggs
  • 1 large onion(s)
  • 150 g bacon
  • Butter, for frying
  • salt and pepper
  • Paprika powder
  • possibly parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

It’s quick, cheap and tastes amazing.

First, heat some butter in a pan (not too much, remember the bacon). While the butter is heating, you can cut the Maultaschen into thin, approximately 1.5 cm thick strips. Sauté the onions and bacon over medium heat. Meanwhile, whisk the milk and eggs and season with salt, pepper, and paprika. Then add the sliced ​​Maultaschen and fry until they have a “good color” (how long you fry the Maultaschen is up to you; some like them crispy, some prefer them softer). Once the Maultaschen are sufficiently browned, pour the milk and egg mixture over the Maultaschen and let them set over low heat. Finally, you can sprinkle fresh parsley over them. Serve with cucumber and tomato salad and a cold beer.
