Woodcutter Spätzle

Ingredients for 4 servings:

  • 400 g flour
  • 2 eggs
  • 240 ml buttermilk and water, half and half
  • salt and pepper
  • 2 tbsp oil
  • 3 eggs
  • 100 g bacon, cut into fine strips
  • 1 onion(s), roughly diced
  • 1 some oil
  • 1 tbsp chives, finely chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Whisk the flour with the eggs, buttermilk, water, salt, and oil until smooth. Whisk the batter vigorously until glossy. Bring salted water to a boil in a large pot. Using a spaetzle slicer, shave the batter directly into the boiling water. As soon as the spaetzle float to the surface, skim off with a slotted spoon. Rinse in cold water and let drain. Fry the onion and bacon in a little oil. Mix the eggs with the chives and salt and whisk to combine. Scramble the eggs in a little oil in a hot pan, then stir the fried onions and bacon into the egg. Mix everything with the spaetzle. Serve and sprinkle with Parmesan cheese.
