Turkey strips Far Eastern style

Ingredients for 4 servings:

  • 400 g turkey breast
  • 2 red bell peppers
  • 1 bell pepper(s), green
  • 1 stalk(s) leek
  • 250 g mushrooms
  • 1 onion(s)
  • 200 ml chicken broth
  • 6 tbsp soy sauce
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp spice mix (Chinese spice)
  • 2 tsp cornstarch
  • 8 tbsp oil

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Cut the meat into thin strips across the grain. Clean and finely slice the vegetables. Thinly slice the mushrooms and slice the peeled onion into rings. Whisk the broth with the spices and cornstarch, then place a sieve over the broth to collect the fried ingredients. Heat 1.5 tablespoons of oil in a large pan or wok. Add the ingredients in the order listed and stir-fry until they change color and are fragrant. Add the broth under the sieve to the fried onion, stir well, bring to a boil, and season to taste. Toss all the ingredients together and heat through. Serve immediately. This is served with rice and Chinese cabbage salad.
