Ingredients for 5 servings:

  • 750 g pork shoulder, cut into 2 x 1.5 x 1 cm pieces,
  • 50 wooden skewers, at least 20 cm long
  • 5 servings of marinade (Sambal Papaya, see my recipe in the database).
  • 5 small onions, red
  • 3 garlic cloves, peeled
  • 1 small red chili pepper (cabe kecil merah)
  • 3 Pepper, red mild, (cabe besar merah)
  • 2 m.-sized tomatoes, halved, stem cut out and then quartered,
  • 2 stalks of lemongrass, take only the white-light green part, chop it up a little,
  • 5 tbsp soy sauce, sweet (kecap manis)
  • 2 tbsp salty soy sauce (kecap asin)
  • 2 macadamia nuts, quartered
  • 3 tbsp lemon juice
  • 6 tbsp orange juice
  • Sugar and salt to taste
  • 2 tbsp soy sauce, dark, sweet (kecap manis)
  • 3 tbsp honey
  • 6 tbsp orange juice
  • 1 small green chili pepper(s), pitted and very finely chopped.
  • 10 small onions, red ones quartered
  • 10 tbsp spice paste (sambal coklat)
  • 5 tsp spice paste (Sambal Bajak, see my recipe in the database)
  • 10 lettuce leaves
  • 10 slice(s) of tomato(s)
  • 10 flowers
  • 15 g desiccated coconut

Instructions

Working time approx. 40 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 50 minutes

Tender pork skewers with spicy, brown sambal

Make the sambal papaya or defrost it if you already have it. Marinate the sliced ​​meat according to the recipe. Soak the satay skewers in lukewarm water. This prevents the meat from sticking while grilling. Thread a few pieces of meat onto each skewer. Blend all the ingredients for the sambal coklat in a blender on high speed until smooth. Season with sugar and salt. Garnish 5 plates with lettuce, tomatoes, and flowers. Place 2 tablespoons of sambal coklat on the empty portion of each plate, along with 1 teaspoon of sambal bajak and 8 sliced ​​onions. Brush the meat on the satay skewers with the sambal coklat. Grill at high heat. Turn several times, always brushing the meat with the sambal coklat. Grill until golden brown on each side. Brush with the honey sauce. Place 1/5 of the skewers on each plate and sprinkle with the white desiccated coconut. Serve with the remaining honey sauce, sambal bajak, kecap asin, and sambal matah in separate bowls.
