Satay skewers “Thai”

Ingredients for 4 servings:

  • 500 g pork
  • 2 tsp curry paste
  • 2 tbsp oil, peanut oil
  • 2 tsp sambal oelek
  • 30 g peanuts, salted, chopped
  • 3 tbsp peanut butter
  • 130 ml water
  • 2 tbsp sugar
  • lemon juice
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the meat into strips and thread them onto wooden skewers in a wavy pattern. Combine the oil with 1 teaspoon of curry paste and 1 teaspoon of sambal oelek. Brush the skewers all over with this mixture and chill for about 15 minutes. Toast the chopped nuts in a pan. Add the water and peanut butter and bring to a boil. Season to taste with the remaining sambal oelek, curry paste, salt, sugar, and lemon juice. Let the sauce reduce slightly. Grill the skewers for about 10 minutes and serve with the sauce.
