Tartar balls with ginger

Ingredients for 6 servings:

  • 50 g sesame seeds
  • 2 spring onions
  • 35 g pickled ginger, drained
  • 400 g tartar
  • 2 egg yolks
  • 10 tbsp soy sauce
  • 2 tsp wasabi paste

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Toast the sesame seeds in a dry pan over medium heat until golden yellow. Let cool on a plate. Trim the spring onions. Slice the dark green parts diagonally into thin rings and set aside for garnish. Finely dice the white and light green parts. Squeeze the ginger well and chop finely. Combine the tartar, egg yolk, diced spring onions, ginger, and 1 tablespoon of soy sauce in a bowl. Add 1 teaspoon of wasabi paste and knead well. Form 42 hazelnut-sized balls from the minced meat, gently press them into the sesame seeds, and arrange them on top of the spring onion rings. Mix together 9 tablespoons of soy sauce and 1-2 teaspoons of wasabi paste and serve with the tartar balls.
