Ingredients for 1 servings:

  • 250 g flour, type 405
  • 1 tsp, heaped baking powder
  • 1 m.-sized egg(s)
  • 125 g sugar
  • 150 g butter or margarine
  • 7 m.-sized apples, baking apples, e.g. Boskoop
  • some cinnamon, ground
  • 175 g butter
  • 145 g sugar
  • 1 m.-sized egg(s)
  • 1 large lemon(s), grated peel
  • 115 g flour, type 405
  • 200 ml cream, sweet
  • 8 g vanilla sugar (1 packet)
  • 25 g sugar
  • 40 g almonds, sliced

For the dough: Sift the flour mixed with baking powder into a bowl. Make a well and add the remaining dough ingredients. Sprinkle with the flour and knead well. Form a ball and store in the refrigerator. For the icing, step 1: Mix the softened butter, sugar, egg, and grated lemon zest well, then add the flour and continue mixing. Let stand. Peel, quarter, and core the apples. Remove the dough from the refrigerator and place it in a greased, breadcrumb-coated 28 cm springform pan; form a 3 cm rim. Prick the base and sides several times with a fork to prevent bubbles from forming. Arrange the apples on top and then sprinkle with a little cinnamon. Glaze, step 2: Whip the cream with the vanilla sugar until stiff peaks form, then fold in with a spatula. Spread this mixture over the apples to create a level surface. Sprinkle with approximately 25 g of sugar and finally the flaked almonds. Bake in a preheated oven at 190 degrees Celsius (375 degrees Fahrenheit) for 40-45 minutes on the lowest rack. If using a combo oven: lowest rack, top/bottom heat, temperature 190 degrees Celsius (375 degrees Fahrenheit), microwave (180 watts), 35-40 minutes. It’s recommended to leave the cake in the oven for about 10 minutes with the oven turned off.
