Ingredients for 1 servings:
- 500 g flour
- 250 g butter
- 1 pinch of salt
- 4 tbsp sugar
- 2 egg whites
- 1 egg(s)
- 1 lemon(s)
- ¼ liter milk, lukewarm
- 1 cube of yeast, fresh
- 1 tsp sugar
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Sift the flour into a mixing bowl. Cut the butter into very fine flakes and add to the flour, along with the salt, sugar, egg whites, and whole egg. Grate the lemon zest, squeeze the juice, and add it to the flour. Knead everything well. Mix the yeast and sugar with the lukewarm milk, let stand for a few minutes, then stir again. Add to the dough and knead well. Cover the dough with a cloth and let it rise for about 30 minutes. Pour the dough into a well-greased 30cm loaf pan and let it rise, covered, for another 30 minutes. In the meantime, preheat the oven to 180°C. Baking time: just over an hour (use a skewer to check the doneness). Let the coffee bread cool on a rack.
