Ingredients for 3 servings:
- 1 large potato(s)
- 2 large onions
- 2 eggs
- 5 tbsp flour
- salt and pepper
- nutmeg
- Oil (sunflower oil)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the potatoes and grate them coarsely. Finely dice the onions and add them to the potatoes. Season generously with salt and just a little pepper. Add a little nutmeg. Add the eggs and flour to the potato mixture and mix everything together. To taste, fry a small amount of batter in a little oil and taste. Most of the time, you don’t add enough salt to start with, which makes it taste bland, so feel free to add more seasoning! Heat the oil in a medium-sized non-stick frying pan. Pour enough batter into the pan to completely cover the bottom of the pan; not too thin, not too thick. Fry over medium heat. When the underside is golden brown, flip it with a spatula or a lid and fry the other side until nicely browned. We like to eat Schnibbelskuchen with beetroot syrup on top, similar to potato pancakes.
