Ingredients for 4 servings:

  • 400 g leek
  • 400 g jacket potatoes, sliced
  • 100 g smoked meat or ham
  • 6 eggs
  • Butter, in flakes
  • salt and pepper
  • breadcrumbs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the leek and cut it into 2 cm thick pieces. Steam it in a little salted water, then pass it through a sieve. In a greased dish, alternate layers of smoked meat, potato slices, and leek. Now scramble the eggs and pour over the mixture. Sprinkle with butter and breadcrumbs on top. Place in the oven and bake at medium heat. Serve with brown bread and a delicious leaf or tomato salad.
