Potato and golden beet patties

Ingredients for 3 servings:

  • 750 g potatoes
  • 500 g beet(s) (golden beet)
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 1 pinch of marjoram
  • Breadcrumbs
  • Oil for frying

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Boil the potatoes and golden beetroot in chunks for about 30 minutes until soft, then mash with a potato masher. If the golden beetroot is bought pre-cooked, it’s usually difficult to mash, so simply cut it into small pieces. Add salt, pepper, and marjoram and mix well. Add enough breadcrumbs to easily form the patties. Then heat a pan with oil and fry the patties until golden brown on both sides. Optionally, you can also add feta cheese to the center of each patty. Serve with a herb and garlic dip and a mixed salad.
