Rice or pasta with quick zucchini sauce

Ingredients for 2 servings:

  • 160 g rice (wild rice mix) or noodles
  • 1 zucchini, yellow
  • 1 zucchini, green
  • 100 ml balsamic vinegar, dark
  • 20 ml whiskey
  • salt and pepper
  • possibly herbs, or garlic etc.
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook pasta or rice according to the package instructions. Quarter the zucchini lengthwise and cut into 1 cm thick slices. Heat a little oil in a pan and sear the zucchini until crispy. Drizzle with the balsamic vinegar and whiskey, and finally season with salt and pepper (or other herbs, garlic, etc., if you like). It’s also great to make ahead and take to the office the next day. It tastes great both hot and cold.
