Eggplant on minced beef

Ingredients for 4 servings:

  • 2 eggplant(s)
  • 500 g minced beef
  • 1 onion(s)
  • 5 garlic cloves
  • 400 g feta cheese
  • lots of olive oil
  • Salt
  • Paprika powder
  • Cumin powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Prepare a baking dish and brush it with olive oil. Preheat the oven to 200°C (fan oven). Peel and dice the onions and garlic. Sear the minced meat in olive oil until nicely browned. Season with salt, paprika, and cumin. Add the onions and garlic and sauté briefly. Peel the eggplants, e.g., using a vegetable peeler, and cut them into thirds lengthwise or into slices of appropriate thickness. Then season with plenty of salt and paprika. Roughly crumble the feta cheese. Place the minced meat in the baking dish. Spread about 1/4 of the feta cheese over the top. Arrange the eggplants on top and brush with olive oil. Place the casserole in the oven at 200°C (fan oven) for 20 minutes. Then cover with the remaining feta cheese and bake in the oven for another 10 minutes.
