Baked pumpkin wedges

Ingredients for 4 servings:

  • 1 ½ kg Hokkaido pumpkin(s)
  • e.g. olive oil
  • e.g. Sambal Oelek or Sambal Manis or Sambal Badjak

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut open the pumpkin, peel if necessary, and remove the seeds. Cut into wedges and place on a baking sheet, scoring them crosswise (approx. 1 cm intervals). Brush first with olive oil, then thinly with sambal oelek, and bake in the oven at 180°C for approx. 15 minutes. This goes well with fragrant rice with sweet soy sauce (ketjap manis). Instead of sambal oelek, the less spicy sambal manis or sambal badjak also work well. Hokkaido pumpkin has a very thin, edible skin and does not need to be peeled. Apart from that, this recipe works with any firm-fleshed pumpkin variety.
