Grilled zucchini slices

Ingredients for 1 servings:

  • 2 zucchinis
  • olive oil
  • 1 handful of parsley, flat
  • 1 garlic clove(s)
  • 1 dash of lemon juice
  • herbal salt
  • Salt and pepper, black
  • Basil, dried
  • Oregano, dried
  • Thyme, dried
  • Marjoram, dried

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Chop the garlic and parsley. In a bowl, mix with the dried herbs (amount to taste—I used about 1/2 teaspoon of each), salt, and pepper. Pour in olive oil to coat well, then stir in the lemon juice. Let it marinate for a while. Wash the zucchini and cut diagonally into slightly thicker slices (about 1/2 cm). Sprinkle with herb salt on both sides. Grill the slices (or in a pan) until lightly browned. Then arrange on a plate or platter, drizzle each slice with some of the olive oil and herb marinade, and enjoy.
