Quick vegetarian pasta salad

Ingredients for 4 servings:

  • 500g fusilli
  • 1 bunch of spring onions
  • 3 m.-large bell pepper(s), colored
  • 5 tbsp soy sauce
  • 3 tbsp teriyaki sauce
  • 8 tbsp rapeseed oil
  • 1 tbsp curry powder
  • 1 half lemon(s), juice
  • 1 tbsp sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the noodles according to the package instructions. Meanwhile, dice the bell peppers and finely slice the spring onions. For the dressing, combine the rapeseed oil, soy sauce, teriyaki sauce, curry powder, sugar, and lemon juice in a shaker and shake well. Place the noodles in a colander and drain well. Place the noodles in a large bowl with the bell peppers and spring onions and mix well. Pour the dressing over the noodles and mix well again. Note: You can also use other types of noodles for the salad if you like.
