Low-carb pizza dough

Ingredients for 2 servings:

  • 7 tbsp oat bran
  • 1 tbsp flaxseed flour
  • 4 tbsp wheat bran
  • 2 eggs
  • 1 pinch of salt
  • ½ tsp herbs de Provence
  • some water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Knead all ingredients until a smooth dough forms. Transfer to a baking sheet lined with baking paper. Spread cling film over the dough and roll it out with a rolling pin. Otherwise, the dough will stick to the rolling pin. Remove the cling film. Bake for 10-15 minutes at 180°C (convection oven) or 200°C (top/bottom heat), until the edges are lightly browned. Allow to cool, top with desired toppings, and top with top heat or grill.
