Celery and apple salad with walnuts

Ingredients for 2 servings:

  • 3 stalk(s) Celery
  • 1 apple, sour
  • 4 sprigs of parsley
  • 25 g walnuts
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp mustard, grainy
  • 1 garlic clove(s), crushed
  • 3 tbsp Parmesan, finely grated
  • e.g. salt and pepper
  • 2 pinches of sugar if needed

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

and Parmesan in the dressing

First, prepare the dressing. Mix together the lemon juice, olive oil, grainy mustard, crushed garlic, and Parmesan cheese. Season with salt and pepper. Remove the light-colored bottom end of the celery and remove the strings. Then cut it into thin slices. Finely chop the parsley. Chop the walnuts as well. Finally, peel the apple, remove the core, and cut it into small cubes. Mix the celery, apple, parsley, and nuts in a bowl. Immediately pour over the dressing—the acidity of the lemons will prevent the apple from turning brown. Let the salad sit in the refrigerator for at least an hour. Add sugar to taste, depending on the acidity of the apple and your personal taste.
