Ginger pears with yogurt

Ingredients for 2 servings:

  • 2 small pears, ripe, but still firm
  • 300 ml orange juice
  • 1 piece(s) ginger, fresh, walnut-sized
  • 1 cardamom pod(s), the released seeds
  • 1 star anise
  • ½ cinnamon stick(s)
  • ½ tbsp agave syrup, plus a little to sweeten the yogurt
  • 300 g Greek yogurt
  • Cinnamon powder
  • 2 tbsp walnuts, caramelized

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Bring the orange juice to a boil with peeled and thinly sliced ​​ginger, spices, and agave syrup. Cover and simmer for ten minutes over low heat. Meanwhile, peel and halve the pears, core them, and slice the flesh into thin slices (approx. 3 mm thick). Add to the liquid, bring to a boil, and cover to cool. Season the yogurt with agave syrup and cinnamon. Serve with the pears and caramelized walnuts.
