Veggie sandwich with melted cheese

Ingredients for 2 servings:

  • 2 small baguettes
  • 2 slices of cheese
  • 2 handfuls of gratin cheese, grated
  • 6 cucumber slices
  • ½ avocado(s)
  • 6 olives
  • 3 lettuce leaves
  • 1 pack of meat substitute (vegetarian fillet strips), approx. 175 g
  • some remoulade
  • some ketchup
  • 1 dash of oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

a simple, fresh and vegetarian sandwich

Preheat the oven to 200°C (top/bottom heat). Cut the baguettes open. Wash the lettuce and cucumber thoroughly and cut the lettuce into pieces that fit the baguettes. Halve the cucumber slices. Then cut the avocado and olives into pieces. Top each baguette with half a slice of cheese, torn into small pieces. Sprinkle with a little gratin cheese. Place the halves side by side on a baking sheet lined with baking paper and bake in the oven for about 5-10 minutes (depending on the oven). Meanwhile, fry the fillet strips in a little oil in a pan for a few minutes. Once the cheese is well melted on all halves, remove the halves from the oven. Now top the bottom halves. First add the lettuce, then some remoulade. Spread the cucumber, olives, avocado, and fillet strips on top. Add a little more ketchup on top. Then fold the baguettes together.
