Ham sandwich with strawberries and goat's cheese

Ingredients for 3 servings:

  • 6 slices of sandwich toast
  • 150 g cooked ham
  • 150 g strawberries
  • 150 g goat’s cheese
  • 1 lettuce(s)
  • 1 bell pepper(s), yellow
  • salt and pepper
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp honey
  • Mint leaves

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Toast the sandwich slices in the toaster until golden brown. Then let them cool on a plate. In the meantime, wash and hull the strawberries and cut them into thin strips. Wash the lettuce and tear the leaves into palm-sized pieces. When the bread has cooled completely, spread three slices with goat’s cheese and arrange the strawberry slices on top. Mix together the olive oil, balsamic vinegar, salt, pepper, and honey and drizzle over the strawberries. Let it sit for a while. Cut the peppers into very thin strips and arrange them on the toast with the lettuce. Top with the cooked ham and a few chopped mint leaves, if desired, and cover with a second slice of toast. Tip: If you like, you can also spread the top slice of bread with the goat’s cheese beforehand. Finally, cut the sandwiches in half diagonally and secure them with wooden skewers.
