Avocado toast with mozzarella

Ingredients for 3 servings:

  • 1 avocado(s)
  • 6 slice(s) whole wheat toast (sandwich toast)
  • 220 g mozzarella
  • 6 cherry tomatoes
  • 1 tsp olive oil
  • Salt and pepper, black
  • 1 dashes lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Quick after-work toast

Toast the whole-wheat sandwich slices. Blend the avocado flesh with olive oil, salt, pepper, and a squeeze of lemon juice to make a paste. This is best done with a hand blender, but a fork will also work. Thinly slice the tomatoes and mozzarella. Spread the toasted bread with the avocado cream, top with the tomato slices, then top with the mozzarella slices and season with freshly ground pepper, if desired. Bake the bread in the oven at 180°C for 10 minutes. Grill if desired.
