Leaf salad with blueberries, feta and walnuts

Ingredients for 2 servings:

  • 125 g mixed leaf salad
  • 50 g blueberries
  • 50 g feta cheese
  • 2 tbsp walnuts, roasted
  • 1 tbsp raspberry vinegar
  • ½ tsp mustard, medium hot
  • ½ tsp honey
  • salt and pepper
  • 2 tbsp oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Trim and wash the lettuce, dry thoroughly, and cut into bite-sized pieces. Rinse the blueberries in a sieve and let them drain. For the dressing, combine the vinegar, mustard, honey, salt, and pepper, and whisk in the oil. Mix the lettuce, blueberries, and vinaigrette. Serve sprinkled with crumbled feta and coarsely chopped walnuts. Approx. 229 kcal per serving.
