Tomato – mozzarella with a difference

Halve the avocado, remove the pit, and scoop out the soft flesh. Mash it in a bowl with a fork. Cut the tomatoes and mozzarella into bite-sized pieces and add to the avocado puree. Chop the basil and add it. Season the salad with salt and pepper and a few squeezes of lime. Stir everything together, and you’re done. This fresh salad tastes best with a warm baguette. It’s also great as a side dish to main courses or as an appetizer.
