Lamb's lettuce with candied walnuts

Ingredients for 4 servings:

  • 400 g lamb’s lettuce
  • 200 g cherry tomatoes, halved
  • 100 g walnuts
  • 3 tbsp sugar
  • 4 spring onions
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 tbsp olive oil
  • 1 tsp paprika paste
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 75 ml balsamic vinegar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Thoroughly clean the lamb’s lettuce and drain well. Quarter the cherry tomatoes and set aside. Finely slice the spring onions. Heat the sugar in a pan until caramelized, then remove from the heat and toss the walnuts in the melted sugar. Mix the paprika, mustard, honey, and olive oil. Add salt, pepper, and balsamic vinegar to taste. Mix the dressing with the salad ingredients and serve garnished with the candied walnuts.
