Chicory salad with apples and nuts

Ingredients for 2 servings:

  • 2 m.-large chicory
  • 2 small apples, sweet
  • 10 walnuts, finely chopped
  • ½ bunch parsley, flat or
  • Coriander leaves, finely chopped
  • 1 dashes lemon juice
  • 1 tbsp vinegar (white wine vinegar)
  • 1 tbsp olive oil
  • 1 tbsp oil (walnut oil)
  • Salt and pepper, black from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the chicory into strips. Dice the apples and drizzle with lemon juice. Mix the remaining ingredients into a marinade. Mix everything well. Serve immediately to preserve the nutrients.
