Potato pancakes with carrots, apples and onions

Ingredients for 6 servings:

  • 1 ½ kg potatoes
  • 350 g carrot(s)
  • 150 g apples
  • 100 g onion(s), red
  • 3 eggs
  • salt and pepper
  • Clarified butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Peel the potatoes and carrots. Peel and core the apples. Remove the outer skin from the red onions. Grate everything through a medium sieve using a kitchen grater. Place the drained potato mixture in a bowl, add the eggs, and mix everything together. Season with salt and pepper. Heat the clarified butter in a pan. Pour the batter into flat, round discs (approx. 5-8 cm) and fry until golden brown on both sides. Homemade applesauce is best served with this.
