Banana Walnut Cake

Ingredients for 1 servings:

  • 200 g tofu (not silken tofu)
  • 50 ml water
  • 100 g sugar
  • 2 bananas, ripe
  • 2 tsp vanilla extract
  • 1 orange(s), grated peel
  • 250 g flour (wholemeal)
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp nutmeg
  • 70 g walnuts, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a blender, puree the tofu, water, sugar, bananas, vanilla extract, and orange zest. Sift the dry ingredients and fold them into the wet mixture along with the walnuts, working as quickly as possible and stirring as little as possible. Pour into a greased loaf pan and bake at 190°C for about 40 minutes. I found the sweetness of 100g of sugar perfectly sufficient, but I don’t like it particularly sweet, hence the 150g sugar specification. Next time, I’ll add raisins or other dried fruit.
