Ingredients for 2 servings:

  • 4 wraps, low carb
  • 4 tbsp sour cream
  • 4 slice(s) cooked ham, thin
  • 4 small slices of Cheddar or Gouda cheese
  • 200 g zucchini
  • 2 eggs, size M or L
  • some salt and pepper
  • some paprika powder, smoked
  • 2 tbsp butter

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Simply delicious!

My “Low Carb Wrap Genius” recipe is perfect for the wraps. Preheat the oven to 160°C (fan oven). Line a baking sheet with parchment paper. Cut the wraps into approximately 12 x 12 cm pieces. Place two pieces on the baking sheet, spread each with 1 tablespoon of sour cream, and place a slice of cooked ham on top. Place two small slices of Cheddar cheese on top. Place another piece of wrap on top, then spread 1 tablespoon of sour cream on each, season with paprika, and place another slice of ham on top. Cut the zucchini into 6 equal slices lengthwise. Melt some butter in a pan and lightly fry the zucchini slices. In the meantime, place the tray with the wraps in the oven. When the zucchini slices are done, place three slices on each wrap and leave in the oven. Fry two fried eggs in the remaining butter and season with salt and pepper. The cheese on the wraps should have melted by now. Now add 1 fried egg on top and serve immediately.
