Carrot and spelt patties

Ingredients for 3 servings:

  • 150 g carrot pulp
  • 120 g spelt flakes (alternatively oat flakes, coarse-leaf or 5-grain flakes)
  • 200 ml water, hot (amount depends heavily on the moisture content of the carrot tester)
  • 4 tbsp, heaped soy flour
  • 1 small onion(s), finely chopped
  • 2 tsp, heaped mustard, medium hot
  • 3 tbsp, heaped tomato paste, single concentrate
  • 3 tsp, heaped paprika powder, sweet
  • 2 tsp, leveled sea salt
  • Pepper, freshly ground
  • Oil for frying

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes

quick vegetarian/vegan patties made from carrot pulp

Carrot pulp is the residue left over from juicing. Combine all ingredients except the oil, season to taste, and let it swell for about 30 minutes. Then form it into patties (I use about 9, each with 1 heaped tablespoon of the mixture). Heat a little oil in a nonstick pan and fry the patties until golden brown on both sides. I cook the patties on high to start, then reduce the heat and cook slowly until golden brown.
