Ingredients for 4 servings:
- 1 can of tomatoes, chopped
- 1 pack of tomatoes, pureed
- 1 onion(s)
- 4 carrots
- 1 bell pepper(s)
- 1 can of corn
- 2 zucchinis
- Sugar or liquid sweetener
- salt and pepper
- Paprika powder
- 2 tbsp Ajvar, hot, mild if desired
- 200 ml broth

light and yet really great
Place a saucepan on the stove and heat the pureed and chopped tomatoes with about 200 ml of vegetable stock. Dice the onion, carrots, bell pepper, and zucchini and add them. Stir in the corn and liquid. Season to taste with salt, pepper, and paprika. Add sugar or liquid sweetener (to taste). Thicken with ajvar and simmer for about 30 minutes. We serve this with pasta (of your choice), which I cook al dente. If you like, you can also grate cheese over it.
