Marinated garlic pesto mozzarella skewers

Ingredients for 1 servings:

  • 20 balls of mozzarella (mini mozzarella)
  • 2 tbsp pesto, green
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 20 leaves of fresh basil
  • 20 small cherry tomatoes
  • 1 pinch of salt
  • 1 pinch(s) pepper, black

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Drain the mozzarella balls, let them drain, and transfer them to a sealable container or bowl. Add the pesto, oil, salt, and pepper. Press the fresh garlic over them. Close the container and shake well to coat all the balls with the marinade. Let it marinate in the refrigerator for at least 2 hours, or overnight is best. Shake once or twice more during the marinade. After marinating, thread the balls onto a toothpick or small skewer, along with a tomato and a fresh basil leaf. Arrange on a plate or tray and serve.
