Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 19 minutes

Mash the banana with a fork until the mixture is mushy. It doesn’t matter whether it’s soft or hard. If it’s very hard, we recommend using a blender or chopping it with a knife. Add the eggs and mix well. Place half in a microwave-safe bowl with a lid and close it. Cook at 600 watts for 3.5 minutes. Be careful when opening, as the steam is very hot. Repeat with the remaining banana and egg mixture. Transfer to a plate and serve with maple syrup and fruit, if desired. Since the pancakes aren’t fried, they’ll be very light in color, but they’ll taste the same.
