Make a yeast dough from flour, yeast, salt, sugar, oil, and water. Put the flour in a bowl and make a well in the center. Crumble the yeast into the dough and mix it with a little water, sugar, and flour. Cover and let rise for about 15 minutes. Then mix the pre-dough with oil and salt. Gradually add enough water until you have a smooth dough. Let rise in a warm place for about 45 minutes. Peel the asparagus and cut into 5 cm long pieces. Pre-cook in boiling water with a little sugar and salt for about 5 to 10 minutes, depending on the thickness of the asparagus. Roll out the yeast dough on a baking sheet. Place the pre-cooked asparagus on the dough, season with a pinch of salt if desired, and spread the freshly grated Parmesan cheese on top. Scatter the flaked almonds over the dough and sprinkle the butter flakes on the almonds (without butter the almonds will be bitter). Bake in a preheated oven at 200°C (top/bottom heat) for about 30 minutes on the middle rack. Serve with a white wine.
