Zucchini salad with pomegranate seeds and peanuts

Ingredients for 2 servings:

  • 2 small zucchini
  • 1 pomegranate
  • 1 handful of peanuts, unsalted
  • 2 tbsp sesame seeds
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

vegan and super easy

Wash the zucchini and spiralize it. Heat the olive oil in a pan, briefly fry the zucchini, and season with salt and pepper. Transfer to a bowl to cool. Halve the pomegranate, hold it over a bowl, and tap the seeds with a wooden spoon (be patient and not against a white wall). Mix the zucchini, pomegranate seeds, and all the remaining ingredients together and serve.
