Asparagus and blueberry salad

Ingredients for 3 servings:

  • 300 g asparagus, green
  • 300 g blueberries
  • 1 large lettuce(s)
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp jam (berry flavor of your choice)
  • 1 tsp salt and pepper
  • e.g. mustard

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

spring-like and fruity

Peel the green asparagus, if necessary, and cook briefly in hot water until al dente. Let cool slightly. Wash the blueberries and trim and chop the lettuce. Make a dressing with the olive oil, vinegar, jam, and mustard. Season with salt and pepper. Add the blueberries and asparagus, and finally, fold in the lettuce.
