Zucchini fritters with feta and tzatziki

Ingredients for 4 servings:

  • 450 g zucchini
  • 150 g feta cheese
  • some dill
  • some parsley
  • 1 jalapeño(s)
  • 1 egg(s)
  • 30 g flour
  • salt and pepper
  • 2 tbsp oil
  • 200g tzatziki

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Grate the zucchini, place it in a sieve, and toss with 1 tablespoon of salt. Let it stand for about 5 minutes. Crumble the feta cheese, chop the dill, parsley, and jalapeño peppers, and whisk the egg. Squeeze the zucchini with your hands and mix with the feta, herbs, jalapeño peppers, and egg. Gradually add the flour and stir in. Season with salt and pepper. Heat the oil in a pan, add the zucchini mixture a spoonful at a time, and shape into discs. Fry in the hot oil for about 5-7 minutes until crispy, then drain on kitchen paper. Serve with tzatziki.
