Ingredients for 2 servings:

  • 80 g wild garlic
  • 3 tbsp balsamic vinegar, mild, white
  • 6 tbsp extra virgin olive oil
  • some sea salt
  • some pepper, white

spicy, green salad dressing for approx. 250 g leaf salad, spinach salad

This recipe is sufficient for approximately 250g of green salad. Wash the wild garlic and dry thoroughly so it can absorb the oil. Then chop the wild garlic, removing the stems. Pour the balsamic vinegar into a blender. Add the chopped wild garlic, pepper, and sea salt. Purée the wild garlic in a blender, adding the olive oil as you go, or add it in 2-3 batches and blending again after each batch. This creates a smooth, wonderfully flavorful, creamy salad dressing. For potato salad or pasta salad, you can add more olive oil; this makes the salad dressing a little thinner and allows it to spread evenly, or you can increase the total quantity slightly.
