Green asparagus salad

Ingredients for 2 servings:

  • 500 g asparagus, green
  • 1 pinch(s) of sugar
  • 1 pinch of salt
  • ½ lemon(s) (juice)
  • 4 tbsp olive oil
  • 1 tsp mustard (Dijon mustard)
  • salt and pepper
  • 2 cloves garlic
  • 2 spring onions
  • Sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 15 minutes

Wash the asparagus, trimming long enough ends. Cut the asparagus into bite-sized pieces and cook in salted water for about 10 minutes until al dente. Add two halved garlic cloves to the boil. Drain. Mix the marinade from the above ingredients, leaving the spring onions out. Stir the marinade into the asparagus, leaving the garlic cloves whole and adding them. Let it marinate overnight or for several hours. About two hours before serving, add chopped spring onions. Serve with buttered bread (whole-grain bread is delicious), for example, for dinner.
